1. A wide-mouth zipper

A zipper that runs down the sides, not just across the top, lets the bag open wide. A "doctor bag" or boxy shape with a long zipper opening is the classic example.

2. Structure that holds the shape

Stiffened walls: a board or foam layer between the outer fabric and the lining keeps the sides upright.
